I eat a lot of veggies. And by a lot…well, trust me when I say a lot. As I am currently trying out this whole vegan deal, I can’t help but load my plate with gorgeous red tomatoes, crunchy orange carrots, rich leafy greens, vibrantly violet cabbage, hearty and filling sweet potatoes, you get my point? I adore that my new plant based diet fills me up without leaving me feeling heavy or foggy. Best yet? My dinners are never boring, nor lacking in color!
