Coffee. For some, it’s a luxury. For others, a necessity (#adulting can be hard). Whether you’re a casual sipper or a daily consumer, we can all appreciate a good cup of coffee. But what makes coffee good? I will never label myself as a coffee expert, but I will surely call myself a coffee enthusiast. I wasn’t always this way. Back in the day, I strongly disliked coffee. Yes, I said that. I didn’t enjoy it. It always tasted too burnt, or too acidic, or too… bad.
Well, if you’ve been a skeptic for years or have never tried a freshly roasted mug, I’m hoping to help change your mind. Enter Holy Schmidt Coffee. Heavenly aroma, divine flavor, roasted to order, and ethically sourced. This coffee is the Schmidt. Literally.
Just so happens that this ethical coffee company is also owned by our dear friends, Bijou and Callie Schmidt. I’ve never met a couple more passionate about coffee as these two. With a vast array of coffee brands to choose from, perhaps you’re rolling your eyes thinking just another brand. Let me be real when I admit: this coffee is absolutely delicious. When did your love for coffee begin?
I grew up drinking tea, being that my family is from New Zealand. I didn’t enjoy coffee until I experienced what is called third wave coffee, which was in college at my campus coffee shop in 2008.
Can you tell us the story of how Holy Schmidt Coffee began?
I began roasting my own coffee in 2011 in a 1980’s popcorn popper. There were so many flavors from having fresh roasted coffee that I began sharing it with everyone I knew. It quickly became a business and we moved up to Seattle to study coffee culture and train under some of the great roasters up there.
We really wanted to start a non-profit, but when we dove into the process, we realized we should start a for-profit company that generates money to donate to non-profits.
Your website and labels display the words Ethical | Fresh | Delicious. Can you tell us more about the process of sourcing your coffee and why Holy Schmidt is an ethically sourced brand?
We don’t believe a company should exist if it isn’t benefiting humanity. We seek to add value to life through our coffee, not just for the people who drink it, but also for the people who produce it. We only source coffees through direct trade or fair trade relationships, which means there is no slave labor involved and the producers and the importers are negotiating together on a fair price. Our other products, such as our mugs and hand knit beanies, are also made in the U.S.A. to make sure that there is no chance of slavery or unfair wages involved.
Our coffees are roasted to order for our retail and wholesale customers. We don’t have any coffee sitting on a shelf waiting for you to order it! We only get coffees that we want to drink every morning. Our tasting process makes us go through hundreds of samples a year of coffees before we choose our lineups.
Where and how is your coffee roasted?
We are roasting in Irvine, California in small batches on a 3kilo US Roaster Corp. drum roaster. Each batch is roasted with a lot of heat at the beginning and then slowly tapered down to ensure the beans are fully developed through so you will extract all the delicious flavors!
There are so many coffee options out there these days. From a flavor and quality standpoint, why should I try Holy Schmidt Coffee?
We strive to excite our customer’s palettes and want to create an authentic experience of what the world’s best coffee farms have to offer. We do this through sourcing and roasting coffees that we hope will make our guests say “Holy Schmidt, have you tried this?”

I really recommend the Ethiopia Sidamo Natural right now; it’s a very fruity delicious coffee. If you are looking for a exciting but more traditional flavor profile of coffee I would go with our Holy Blend.
